This recipe is adapted from a Jaime Oliver recipe I found in a magazine. I am having a hard time with oven and stovetop cooking this summer because it heats my kitchen up to 100 degrees. This was a very easy, delicious and made great leftovers! I also love the colors of this dish!
I know it has a lot of ingredients. Most of these you will already have and if you don't feel free to leave out the ones you don't like or don't want to purchase.
Chicken and Marinade
4 boneless, skinless chicken breasts
salt and pepper
1 1/2 tsp soy sauce
2 tsp lemon juice
1 clove garlic, crushed
1 tsp red pepper flake
black pepper
1/2 tsp minced or grated ginger
2 tbls chopped green onion
salt
Lo Mein
10 oz lo mein noodles
1/2 cucumber
1/2 red pepper
2 carrots
2 scallions
1 cup snow peas
1/3 c cilantro
3-4 tbls lime juice
3-4 tsp soy sauce
1/2-1 tsp Sriracha (if desired)
1. Mix soy sauce, lemon juice, garlic, red pepper flakes, pepper, ginger root and green onion in gallon ziploc and throw chicken in
2. Marinade the chicken for at least 30 minutes
3. cook noodles according to package
4. Mix cilantro, lime juic, soy sauce and siracha
5. quarter the cucumber lengthwise, scrape out seeds and slice finely. Using a veggie peeler cut the carrots into ribbons. Slice snow peas, scallions and red pepper.
6. Toss noodles and veggies in dressing and place in fridge until ready to eat (i did this 3 hrs before dinner)
7. Heat grill or grill pan and grill each side of chicken about 6 minutes, slice and serve warm on top of cold noodles
And let's be real... Your kitchen is already 92 degrees without heating up the stove, oven and everything else! :)
